Easy Jambalaya Recipe

Spicy and flavorful slow cooker jambalaya recipe.

Ingredients
  • 1 package andouille sausage
  • 1 pound uncooked shrimp peeled and de-veined
  • 1 large skinless chicken breast
  • 3 large bell peppers 1 red, 1 orange, 1 green
  • 1 large onion diced
  • 1 1/2 cups white rice uncooked
  • 2 cups chicken broth
  • 30 oz can crushed tomatoes
  • 1 tablespoon minced garlic
  • 3 tablespoons cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Slice sausage into 1/4 inch slices

  2. Remove tails from shrimp

  3. Chop chicken into bite sized pieces

  4. Add sausage, chicken, bell peppers, chicken broth, tomatoes, minced garlic, cajun seasoning and salt and pepper to slow cooker and stir to combine.  Cover and cook for 3-4 hours on low.

  5. Stir in rice and cook another 1-2 hours until rice is fully cooked and tender.

  6. About 20 minutes before serving, stir in shrimp and cook for another 20 minutes.  Stir everything together when finished.
