This easy ramen noodle stir-fry is a great kid friendly dinner to make. It’s easy, it’s quick and something the whole family will love!
My older daughter has found a new discovery … Ramen Noodles! She is in love with them. I want to be happy because she can make them herself and they are incredibly cheap. However, the nutrition content just isn’t there, especially considering how often she wants to eat them. So the other day, I decided to get a little creative in the kitchen. I had chicken and broccoli to work with, along with a few other seasonings/sauces we had on hand. Using these, I came up with this really easy ramen noodle stir-fry. And it was a hit!

How to Make Ramen Noodle Stir-fry
First, soak your ramen noodles in a bowl of hot water. You’ll leave these to soak while you make the rest of your meal. I let the noodles soak until I finished with everything and was ready for the noodles. They were a little over done, so you’ll want to check them occasionally and drain them once they are done and set aside.
Next, chop your broccoli and saute with olive oil, salt and pepper until softened. Transfer to a plate when done.
While the broccoli is cooking, chop your chicken into bite sized pieces. Then saute with olive oil, salt and pepper in the same pan you used for the broccoli once the broccoli has been transferred to a plate. No need for extra dishes! Cook the chicken until all the way cooked through, then transfer to the plate with the broccoli.
While the chicken is cooking, go ahead and mix together the sauce in a small bowl. You’ll whisk together soy sauce, cornstarch, hoisin sauce, crushed garlic, water and 1 seasoning packet.
When the chicken has been transferred to the plate, heat the sauce in the pan for about 1-2 minutes until it has thickened up a little. Then add your noodles, chicken and broccoli to the pan and stir together.
If you have sesame seeds or green onions on hand for a garnish, you can add these! Our herb garden has been doing great this year so I love any reason to throw fresh herbs or green onions on anything!
Ramen Noodle Stir-Fry Recipe

- 2 3 oz packages ramen noodles (keep 1 seasoning packet)
- 1 lb chicken, chopped bite sized pieces
- broccoli florets
- 1/4 cup soy sauce
- 2 TBSP cornstarch
- 1/2 cup water
- 3 cloves garlic minced
- 2 TBSP hoisin sauce
- 2 TBSP olive oil

Soak your ramen noodles for 5-10 minutes in a bowl of hot water. Once the noodles are done, drain and set aside.

While the noodles are soaking, saute the broccoli with olive oil, salt and pepper until softened. When done, transfer to a plate.

Saute the chicken with olive oil, salt and pepper and cook until done. Transfer to the plate with the broccoli when done.

Whisk together the soy sauce, cornstarch, hoisin sauce, minced garlic, water and 1 ramen noodle seasoning packet. Pour sauce into a pan and heat for 1-2 minutes until thickened.

Add noodles, chicken and broccoli to the pan with the sauce. Stir everything together and enjoy!
